This is not just a great Japanese cookbook. It is a great cookbook in general. Not content to merely compile a series of recipes, Shizuo Tsuji adds descriptions of cooking techniques unique to Japanese food, insight into Japanese culture, and more importantly he imparts valuable knowledge on how to understand and appreciate Japanese cuisine.
He divides the book into two parts. The first part begins with a discussion on how meals are prepared and composed. Then he explains ingredients, tools, and techniques that are frequently used in the book. He ends part one with recipes that are intended to be a basic introduction to various types of Japanese food (each "type" employs different methods of preparation and cooking, such as frying, steaming, etc.) The recipes are traditional Japanese meals that you would encounter if you went to Japan.
Part two is all recipes, again divided into the same types that part one is divided into. However, these are slightly more complex and they build on the techniques learned in part one.
This is a book that can be used by beginners or more advanced cooks. It is definitely a useful reference for all those who love Japanese food and would like to know how to make it and how to enjoy it authentically.

If you love Japanese food, this is the book for you. More then simply a list of recipes, it really does describe Japanese cooking as an art form. Unfortunately, if you are a newcomer to Japanese cooking as I myself am, the book is not particularly useful in the kitchen. First of all, the book sacrifices ease for authenticity. This means that many of the dishes require ingredients or tools that aren't readily available at the local supermarket. However, if you want to really learn how authentic Japanese food is prepared, look no further.

This is a very good introduction to cooking with cast iron. The first couple of chapters give you the basics of using cast iron (seasoning, how and what to buy, caring for and using, etc.). The second part of the book has all the recipes with chapters on meats, poultry, seafood, vegetables, breads/cornbreads, desserts, and non-traditional dishes. There is also a chapter on using an outdoor dutch oven and some recipes to go along with that.
Overall, the recipes are good but do use more bacon fat and butter than I would like. Every recipe is accompanied by its nutritional information so you can decide if you need to substitute some of the ingredients or not. The hushpuppies recipe has slightly more than 50% of its calories come from fat so let the cook beware.
Definitely buy this book if your are new to cast iron cooking. If you are a pro, I might hold off as the book will probably be too introductory.

I'm not overly crazy about the lay out of the book, but the amount of info in here is worth the cost of the book alone.
Very few recipes call for processed pre-packaged foods (mostly just a few of the desserts).
Its a good starter book for both the info and the recipes.

As a bachelor looking for a lifestyle change in my eating AND spending habits, this cookbook is really a perfect fit for me. I have always been intimidated in the kitchen and I also have a fairly hectic work schedule. Therefor I end up eating out or ordering in most of the time; two very expensive and arguably unhealthy options in the long run.
This book is comprised of a great collection of easy-to-follow recipes with simple, healthy ingredients which can all be found at my new favorite grocery store, Trader Joe's. The recipes are organized into categories that make it easy to plan an entire meal, from appetizers to salads to main course to desserts. And the accompanying photographs beautifully capture what I have to look forward to when deciding on what to make next. There are also great recipes for healthy snacks, nourishing soups and lean lunches. The real value of this book doesn't end with the many tasty recipes. The author has included vital nutrition facts that define good vs. bad carbs and gives great recommendations on how to boost your metabolism and lose extra belly fat.

I have several East Indian Cook books, but Healthy South Indian Cooking has fast become my favorite. The descriptions of the many spices, oils, herbs, and the multilingual glossary are a great help for this westerner when shopping for ingredients. The recipes are easy to follow and the instructions on when to add each spice ensure success and the utmost flavor. As one who loves to cook and make notes about recipes, it is a pleasure to finally have a book that allows space on the pages for just that without skimping on the type size or readability of the recipes. I took the book with me to my local international food store to show the owner, who was so pleased that she is ordering her own copy. Food should be beautiful to look at, fun to make and exciting and healthful to eat. Healthy South Indian Cooking does it all. Thank you to authors' Vairavan and Marquardt for this delightful addition to our joy of eating.

I can't really add much more to the positive reviews here, other than to echo them: The recipes in this book are all really wonderful (at least those I've tried). I find it odd that she doesn't include recipes for her own spice blends, but that's not a huge importance to me. Lots of hurried home Indian cooks use prepared spices, too.
The only real beef I have with the book is the idea that the recipes are in some way healthier than the average southern Indian cookbook's. Indian cooking has more vegetables, legumes and other plant foods than many other cuisines, but even southern cooking has tremendous amounts of fat. This book's recipes are no different.
Unfortunately, authentic Indian cooking is somewhat akin to the traditional recipes of the American south. You CAN make healthier versions of breaded chicken, sweet potato casserole and pork chops ... but they won't be the classics that people grew up with.
I really wish someone would write a good, comprehensive Indian cookbook devoted to decreasing the fat. With all the stews, soups and yogurt-based dishes in the cuisine, there seems ample opportunity for someone to take on the task of adapting some of the classics.

I am not a vegetarian, but after the phenomenal success I enjoyed with "The Pressured Cook", I picked up this cookbook. Lorna Sass includes the standards but also tantalizes with new combinations. Every experiment I have tried has been enough to wow my "meat-and-potatoes" husband and co-workers alike. The Vegetarian Paella with artichokes was a big hit at an office pot-luck.

I just bought my pressure cooker a week or so ago and have been using it in conjunction with this cookbook. Man is it great! The recipes are varied, interesting, tasty and right on target for use with one of these kitchen tools. The author provides all sorts of tips, "lessons learned" and ideas for making up recipes and menus of your own. She is clearly well versed in how to use the pressure cooker. She even gives tips on freezing food if you make a big batch. So far allof the recipes have turned out great which I really appreciate since I had never used a pressure cooker before.

This recipe book has really broadened and rejuvenated our (senior) home meals. The best features are:
listing of all items needed AND they are all COMMONLY found in our local stores;
simple, step-by-step directions;
not too long nor hard to prepare; and
celicious dinners and lunches.
We expected to receive a good book from this publisher but got a really great book!

We love this book! Most recipes actually make enough for three meals, which is fine; we have two for dinner, and I take the leftovers for lunch a day or two later. We're saving so much money by not throwing away food, and we're losing weight by not overeating!

I've never eaten at El Bulli, and I know Chef Adria only via some guest appearances on TV. I can't say enough good things about this cookbook. It will work for novices and experts alike. There are tons of tips, and many of the sauces have freezing instructions as well. Pretty much every step has a full-color photo, so it's hard to make a mistake. There are no strange ingredients either. My only complaint (if I can say that) is nearly every meal contains a fish course--and I'm not a fan of fish. My husband is, however, so thinks it's the best cookbook I own. :)
When I bought it, Amazon did not have any way to preview it. So, I'll try and tell you what's in it.
First, there are the basic recipes. Each one of these has step by step close-up pictures.
Picada, Tomato sauce, Sofrito, Bolognese sauce, Romesco sauce, Pesto sauce, Barbecue sauce, Teriyaki sauce, Chimichurri sauce, Croutons, and Aiolo. Most have two different quantities you can make depending on your needs.
Stocks: One nice tip he gives is that they reboil the stuff they made a stock with, calling it second stock....and then use that as the water the next time they make stock.
Fish stock, chicken stock, beef stock, and ham stock.
Now the meals. There are 31. Each one contains ingredients for 2, 6, 20, and 75 people. Each one contains step by step pictures and a timeline.
Meal 1: Caesar salad, Cheeseburger ; potato chips, Santiago cake
Meal 2: Pasta bolognese, mackerel ; potato stew, chocolate cookies
Meal 3: Vichyssoise, lamb w/mustard ; mint, chocolate truffles
Meal 4: Beans w/clams, salt cod ; vegetable stew, baked apples
Meal 5: Polenta ; parmesan gratin, sesame sardines w/carrot salad, mango w/white chocolate yogurt
Meal 6: Potato chip omelet, pork loin w/ peppers, coconut macaroons
Meal 7: Saffron risotto w/mushrooms, Catalan style turkey, Yogurt foam w/strawberries
Meal 8: Roasted eggplant w/miso dressing, sausages w/tomato sauce, creme Catalane
Meal 9: Lime-marinated fish, osso buco, pina colada
Meal 10: Miso soup w/clams, Mackarel w/vinaigrette, almond cookies

There are not that many vegetarian options--and none of these are bargain meals. Still, Chef Adria gives good tips like on what to do with leftover almond pulp after making almond milk, tomato pulp, etc. Sounds like nothing is ever wasted.
This is a beautiful book. Even if you don't think you'll make an entire meal as written, I'm sure you'll enjoy the detailed instructions and fabulous recipes for many of the different courses.

I just attended his lecture in DC and was struck by the humility and charisma of this great cook and thinker. If you have not dug into the very creative world of Ferran then this is a great place to start. You will find easy recipes (including cheeseburgers!) and easy but effective techniques. Luckily I got the book signed at the lecture. It does not include the avant-garde approaches that have made him so famous and controversial.

- ingredients are generally pretty standard, but usually with a delightful twist
- stage by stage pictures (the book is over-sized and a great format - each key preparation stage is documented) mean you learn as you cook
- fabulous combinations
- timelines to help you plan the meal
- guide to basic methodologies for stocks and sauces and suchlike
On AMAZON this book in hardcover is an absolute steal at $17 do not hesitate to get it. Like Picasso who painted in a traditional style before pushing the boundaries with concepts like cubism, this book shows the authentic basis to Ferran Adria as a foundation to deconstructing and reconstructing and reinventing food.
