This is a great textbook - As a Culinary Arts Instructor we use it in our classroom semester after semester. It seems to provide enough information as a suppliment of what is physically demonstrated in the classroom to develop Culinary Art Skills.
I wanted a text which also had a DVD.
Few texts have DVD attached. This one has a DVD which adds greatly to the wriiten word.A must get for those interested in culinary pursuits.
